Sitka spruce and Chocolate Tree's Guatemala 50% milk chocolate

Sitka spruce is the most planted afforestation species in Scotland, and there is never any shortage of yopung spring tips to pick in the spring. All the conifers have distinctive flavours, and Sitka's young shoots are bright and citreousy. We use them to flavour ganaches and caramels, as well as dry the tips and grind them into chocolate.
We have paired the tips with Chocolate Tree's gorgeous Guatemala 50% milk chocolate, an award winning chocolate in its own right. In 2024 we entered our Sitka spruce version into the International Chocolate Awards' British Craft Chocolate competition and were delighted when it won Gold in the flavoured milk chocolate category.
Ingredients: Cocoa solids 50% minimum: cocoa beans, cane sugar, MILK powder, dried Sitka spruce shoots (1%).
