Flavours

Each time we make a batch of fresh chocolates, we chose four seasonal flavours - and these will depend on what is available at that moment - from the wild in this beautiful corner of Perthshire, from local gardens or farms, or what just feels right for that time of year.  Each selection includes a fresh herb of some kind, and at least one white chocolate ganache, one or two milk chocolate and one or two dark chocolate ganaches.  Each box contains a clear menu to guide you through the flavours.  The chocolate shells are always made with a 70% Madagascar couveture, and the milk and white chocolates used to make the ganache are Fairtrade certified.

Please note that as these chocolates are made with fresh cream and no preservatives, we recommend that they are consumed within two weeks. Gluten free, wheat free and suitable for vegetarians. They are made fresh to order and can take up to 5 or 6 working days to be delivered.  We general make one batch a week, starting on Monday and they are ready to dispatch on Wednesday.  For this reason, it is helpful for us to have orders that are to be delivered from the Wednesday onwards of any week, that we have the order in place by the Sunday before it.

Ingredients

Shells: plain chocolate (cocoa solids 70% min.; cocoa mass, cane sugar, cocoa butter); milk chocolate (cocoa solids 35% min.: sugar*, cocoa butter, whole MILK powder 22.5% min., cocoa mass*, emulsifier: SOYA lecithin); white chocolate (cocoa solids 28% min.: sugar*, cocoa butter*, whole MILK powder 23.5% min., emulsifier: SOYA lecithin, natural vanilla flavouring*): gold leaf.

Fillings: Flavour ingredients will vary with seasons; the basic ganaches are made with the following ingredients: plain chocolate (cocoa solids 64% min.; cocoa mass, cane sugar, cocoa butter), milk chocolate (as before), white chocolate (as before), double cream (MILK), glucose syrup.
