Rowan berries are a wonderful autumnal sight - their bright and intense red clusters a berries are a joy to behold, although slightly tempered by the 'nature law' that early and very red berries foretell a very cold winter. The berries were early and very red this year - so we've been warned!
I have never successfully made anything I really like with rowan berries - they are traditionally made into jelly with crab apples - but there is always a bitterness to the flavour that I am not sure about. I experimented this year with salting the berries, and really like the results - the salt and slight fermentation brining out different flavours. The berries also turned from red to orange and the white chocolate made with the dried berries is a glorious colour.
Ingredients: Cocoa solids 38% min: cocoa butter, cane sugar, whole MILK powder, dried salted, fermented rowan berries (rowan berries, salt) (6%)
