Round leaved plantain seeds
Plantago major
Plantago sp are prolific and useful plants - both from a wild food perspective as well as skincare and soothing bites and stings. The seeds of the round leaved plantain are, to my taste, really malty in flavour and I love them with chocolate. We have lightly toasted the seeds and then ground them into a plain chocolate, to make a plant-based 'milk' style chocolate. We made the chocolate using cocoa nibs from Colombia, sourced through Fairtransport, a shipping company that sails cargo across the Atlantic under sail.
Ingredients: Cocoa solids 66% minimum: cocoa nobs, sugar, round leaved plaintain seeds (17%), cocoa butter.
