Wild garlic

This may not be a classic chocolate pairing, but we do really like it! The wild garlic has been lacto-fermented, which intensifies the flavour and makes it more umami and salty. We then dry it, and grind it into a plain chocolate
The choice of chocolate is important for this flavour - it needs to be robust enough to stand up to the flavour, as well as naturally having complimentary flavours within the flavour profile. We chose a fabulous 70% Ecuador plain chocolate from NearyNogs chocolate makers, which we think has tobacco and woody notes, that seem to really support the garlic flavours.
Ingredients: Cocoa solids 69% minimum: cocoa beans, sugar, cocoa butter, dried fermented wild garlic (1%)
