Dulse
Palmaria palmata
Dulse was historiacally commonly used along the coastal areas of the north as a tasty and inmportant food - often just dried and chewed as a snack. We picked the dulse in COlonsay, dried it and then lightly toasted it to bring out its flavours.
We have paired it with a wonderful Haiti 70% plain chocolate, made by Pump Street Chocolate, which has robust chocolate flavours that carry the umaminess of the seaweed really well.
Ingredients: Cocoa solids 69% minimum: cocoa beans, sugar, cocoa butter, dried and toasted dusle (1%)
