Crab apples are little wild apples that are incredibly tough and persistent small trees - often found on high hillsides at the sites of old crofts or homesteads. The gnarled lichen coated trees bear lovely blossom in spring, and then small, hard, often scabby little apples. Not really dessert apples, but they make fabulous bases for jams and jellies.
We have pureed the apples, dried the puree and ground that into BareBones's Honduras 55% milk chocolate, giving it a wonderful tart, fruity edge to this delicious chocolate.
Ingredients: Cocoa solids 51% minimum: cocoa beans. sugar, whole MILK (DAIRY) powder, cocoa butter, dried crab apple (8%)
