Breadalbane rose

In our garden and many others in the area, you can find a lovely old-fashioned pink climbing rose that is known locally as the Breadalbane rose. It has a gorgeous scent - and we have used it to flavour ganaches for a few years. The petals retain their scent even when dried, and we realised that we could grind them into chocolate to give a lovely rose-scented, Turkish delight chocolate bar.
We have used Chocolat Madagascar's 37% white chocolate for this bar, and the petals have turned the chocolate a lovely dusky pink.
Ingredients:
Cocoa solids 36% minimum: cocoa butter, cane sugar, whole MILK powder, GMO free SUNFLOWER lecithin, dried Breadalbane rose petals (1.5%).
