Blaeberry
Vaccinium myrtillus
In late July and August, the pine forests and moorlands are juicy with blaeberries - gorgeous little purple-blue capsules of taste and sweetness. We pick as many as we can, and the main limitation is how long the midges can be endured! They can be dried, made into leather, fermented, made into jelly, pulped and dried for grinding into chocolate. It is the latter we use for this chocolate, matching the earthy, fruity flavours with a fabulous 72% Solomon Islands plain chocolate from Pump Street Chocolates
