Blaeberry
Vaccinium myrtillus
In late July and August, the pine forests and moorlands are juicy with blaeberries - gorgeous little purple-blue capsules of taste and sweetness. We pick as many as we can, and the main limitation is how long the midges can be endured! They can be dried, made into leather, fermented, made into jelly, pulped and dried for grinding into chocolate. It is the latter we have used for this chocolate, turning the white chocolate into a deep purple colour with a gorgeous blueberry and cream flavour.
We have used almonds instead of milk-powder in this chocolate, to make it dairy free
Ingredients:Cocoa solids 36% minimum: cocoa butter, defatted almonds (NUTS) meal (27%), cane sugar, dried blaeberries (9%).
