Madagascan cocoa beans create wonderful bright fruity chocolates, often quite pale in colour. We create the pine flavour by infusing young spring pine shoots, capturing fresh spring sap flavours rather than heavy resinous ones. Eating this chocolate is like being in a pine wood on a clear bright spring morning.
