The white chocolate that we use is made by a company called Luker, based in Colombia. They use undeodorised cocoa butter from fine cacao beans for this chocolate, and the chocolate has high levels of cocoa butter, which means less sugar and the cocoa butter retains natural flavour from the bean. We infuse summer elderflowers, picked on the south shore of Loch Tay, and the delicate flavour of the flowers works beautiful with the delicate floral notes in the chocolate.
